Peri Peri Chicken
Dinner / Meal Prep
1kg / 6 thigh cutlets, skin on (bone in)
1 tbsp olive oil
2 tbsp Just Flavour Peri Peri (1 mild, 1 spicy)
1 lemon wedge, squeezed
Pat the skin of the cutlets dry with kitchen paper and place in a large bowl.
Drizzle with oil, sprinkle with Just Flavour Peri Peri, salt and a squeeze of lemon. Mix and coat cutlets evenly.
In a hot pan with oil, place skin side down to sear. Keep temperature around medium - high.
Cook for about 5 minutes each side, turning when necessary to prevent burning. Cook around 20 minutes in total or until juices run clear and the meat is cooked through. Serve with your fav sides, enjoy!
Alternatively, you can cook in the oven at 180°c for 45 minutes depending on the size of the cutlets. Aim for smaller cutlets so they take less time to cook, whilst still retaining moisture!
