Quick Oriental Chicken Noodle Soup
- 1 egg (optional)
- 1 tbsp olive oil
2 chicken thighs, strips
- 1 red chilli, sliced (optional)
1 tbsp Just Flavour Oriental
1L chicken stock, salt reduced
1 tbsp soy sauce, salt reduced
- 200g fresh egg noodles
- 1 pak choy, cored, halved
- 1/2 cup spring onions, sliced
Soft boil eggs for 7 minutes or 10 minutes for firm (optional)
Heat oil in a pot on medium. Brown chicken with chilli and Just Flavour Oriental for 5 minutes.
Add a splash of stock to help lift the brown pieces on the bottom of the pot, this adds flavour and helps dissolve the seasoning.
After cooking the chicken for 5 minutes, add all the stock and soy, bring to the boil.
Add noodles and greens, turn off the heat. Adjust salt and pepper to taste.
Serve with soft boiled egg and fresh coriander, enjoy!
