Oriental Prawn Noodle Soup
- 1 egg (optional)
1 tbsp olive oil
- 1 red chilli, sliced
- 2 garlic cloves, diced
1/2 tbsp Just Flavour Oriental
- 500ml Tasmanian Mures fish stock
- 1 cup water
- 1 tbsp soy, salt reduced
- 150g Pandaroo dry egg noodles (3 bundles)
- 10 raw prawns, shelled
- 1 pak choy, halved
Soft boil egg for 7 minutes or 10 minutes for firm (optional).
Heat oil in a pot on medium - low. Lightly fry chilli, garlic and Oriental for 2 minutes.
Add a splash of stock to help lift the brown pieces on the bottom of the pot, this adds flavour! Add the remaining stock, water and soy. Bring to the boil.
Meanwhile, allow cooked egg to cool, peel and set aside.
Add noodles and cook for 4 minutes. Add the prawns after 2 minutes.
Turn off the heat and add the pak choy. Adjust salt and pepper to taste, serve with egg and fresh coriander (optional), enjoy!
