Vegan Chilli Con Carne
Makes 2
Ingredients:
- 1 tbsp olive oil
- 1 brown onion, diced
- 4 garlic cloves, diced
- 1 capsicum, diced
- 1 x 400g can Italian tomatoes
- 1 x 420g can mixed beans
- ¼ cup jalapeños, diced
- 1 tbsp JF Mexican seasoning
- 1 tbsp tomato paste
Method:
Heat oil and sauté onion and garlic. Add capsicum and soften.
Add tomatoes, beans, jalapeños, Mexican and tomato paste.
Simmer gently for about 5 minutes. Check seasoning, add salt and pepper if required or fresh herbs.
Serve with brown rice and coconut yoghurt.
Enjoy as is or great to use for nachos, tacos and burritos!
