Peri Peri Baked Chicken
- 3 - 4 chat potatoes, sliced 5mm thick
- 2 tsp JF Peri Peri seasoning
- 1 tsp olive oil
- ½ lime, juiced
- 2 garlic cloves, crushed
- 4 chicken thighs (approx. 500g)
- 1 truss tomato
- Salad or veggies to serve
Pre-heat oven to 180°c. Arrange potatoes in a lined baking tray.
Add Peri Peri, oil, lime, garlic and chicken to a bowl. Coat evenly and place on top of the potatoes. Bake for 30 - 40 minutes depending on the thickness of the chicken.
After 20 minutes, turn chicken and add truss tomatoes to the tray. Bake for a further 10 - 20 minutes until cooked. Serve with salad or veggies.
TIP: Cook bulk chicken and use in different ways such as wraps, sandwiches, pizza toppings, omelettes or use as meal prep.
