Mexican Pulled Pork (Carnitas)
This recipe makes a large amount which is hard to avoid but also allows you to make so many amazing dishes! Also, freezing the meat is definitely an option as it keeps well and supplies you with pulled pork for much longer 😉
- 1 brown onion, diced
- 5 garlic cloves, crushed
- 1 cup orange juice
- 2 limes, juiced
- 1.5kg pork shoulder aka pork butt (contains a higher fat content which means it will be juicy!)
- 3 tbsp JF Mexican seasoning
Add onion, garlic, orange and lime juice to the slow cooker. Rub the entire pork evenly with Mexican seasoning and add to the slow cooker. Cook on high for 5 hours or low for 8 hours.
Once cooked, allow meat to cool, then transfer to a tray. Shred the meat using 2 forks.
Reduce the remaining liquid in a pot until slightly thickened. Add salt and pepper if required. This is great to use when heating up the meat or as a sauce.
TIP: Now you’ve got all the ingredients to make amazing dishes! All you need to do next is heat up the pork by frying a portion with some reduced liquid and serve with your favourite meals. Great with Burrito Bowls, Tacos, Fajitas or use as meal prep.
