- 2 free range eggs
- 1 tsp JF Italian seasoning
- 1 cup JF Everything roast veggies (see recipe)
- ½ cup JF Peri Peri baked chicken (see recipe)
- Grated cheese
Whisk eggs and Italian seasoning together until well combined.
Heat veggies and chicken in the microwave. Spray a non-stick pan with olive oil and allow to heat.
To test if the pan is hot enough, drip a tiny amount of mixture into the pan. It should sizzle immediately.
Pour in egg mixture and tilt pan to cover the base. When the egg is almost cooked and easy to unstick around the edges, add veggies and chicken to one half.
Sprinkle with grated cheese and flip over the other half to carefully seal. Serve immediately.
