Slow Cooked Italian Lamb Shanks
Serves 6
Ingredients:
- 2 brown onions, diced
- 2 leeks, roughly chopped (optional)
- 6 garlic cloves, crushed
- 6 lamb shanks (approx. 3kg)
- 2 x 400g can diced tomatoes
- 1 cup stock or water
- ½ cup red wine
- 2 tbsp JF Italian seasoning
Method:
Pre-heat oven to 200°c. Roughly chop onion, leek, garlic and place on a lined tray. Layer the lamb shanks on top and place in the oven. Roast for 1 hour, turning shanks after 30 minutes. Roasting or browning the shanks prior is essential for developing a rich flavour!
Remove after 1 hour and place shanks into a slow cooker. Add tomatoes, stock, wine and Italian seasoning to the tray. Mix well and pour over the lamb shanks. Cook on low for 6 hours. The meat will fall off the bone!
Once cooked, remove shanks and season the liquid with salt, pepper and fresh herbs. Use this as a sauce and serve with veggies and mash potato.
TIP: The great thing about this dish is not only the taste, but the versatility! Feed the entire family, use as meal prep, wraps, sandwiches or pizza topping. You can even separate the meat and freeze portions, saving you cooking time!
