- 2 fillets of fish, we used coral trout (approx. 200g each)
- 2 limes, juiced
- 1 tbsp JF Peri Peri seasoning
- Lemon slices (optional)
- Spring onions, sliced
Preheat oven to 200°c. Tear 2 large pieces of baking paper. Lay fish fillet diagonally in the middle of each piece of paper. Transfer paper, keeping fish in the middle, to a baking tray. Begin creating parcels by folding and scrunching the sides of paper tightly.
Mix together lime juice and JF Peri Peri. Pour evenly into each parcel. Arrange lemon slices and spring onions on top or any garnish you prefer.
Completely seal parcels tightly. Bake for about 8 minutes depending on the thickness of the fillets. The fish will turn completely white when cooked.
Remove tray and rest the fish for a few minutes to finish cooking. Serve with JF Italian Chips and salad.
TIP: Try with any of our other flavours to switch it up. This recipe can easily be duplicated to feed the entire family!
