Chicken Fajita Kebabs
- 1 tbsp olive oil
- 1 tbsp JF Mexican seasoning
- 1 lime, juiced
- 500g chicken thigh, cubed
- 3 small capsicums (red, yellow, green)
- 1 red onion, cubed
- 1 avocado
- ½ lemon, juiced
Soak 6 skewers in water. This helps prevent them from burning during cooking!
Mix oil, Mexican seasoning and lime juice together in a dish. Add chicken and coat evenly.
Cut capsicums and onion into even size squares. Layer ingredients onto skewers in desired order. Refer to photo for guidance.
They only take about 15 - 20 minutes to cook and are delicious on the BBQ! Or alternatively, the pan or oven work great too.
For the guac, mash avo with lemon juice, salt and pepper. Serve all together.
TIP: Any left over capsicums or onion can be cooked up and tossed in a salad. JF 😄
