- ¼ cup can tomatoes
- ¼ cup mixed beans
- ¼ cup corn kernels
- 1 tbsp jalapeños, chopped
- ⅔ cup chicken, cooked and chopped
- 1 tsp JF Mexican seasoning
- 1 wrap
- ¼ cup grated cheese
- 1 tbsp sour cream or Greek yoghurt
- ½ tomato, diced
- ½ tbsp red onion, diced
- ½ tbsp spring onion, sliced
- Squeeze of lime
Combine tomatoes, beans, corn, jalapeños, chicken and Mexican together in a bowl and set aside.
Place a handful of spinach along the middle of the wrap. Place chicken mixture along the top.
Wrap up tightly and secure with a toothpick. Place on a lined tray and sprinkle with grated cheese.
Bake at 200°c for 10 minutes or until golden.
Combine salsa ingredients with a squeeze of lime and salt and pepper to taste. Serve all together with a dollop of sour cream or Greek yoghurt.
TIP: Switch up your protein for a different flavour. This mixture would also be great as a nacho topper and served with guacamole!
