Not your average sweet potato soup.. it's something DIFFERENT! 😍 the flavours of our Moroccan seasoning combined with the sweetness from the sweet potato and coconut, citrus from the lime and aniseed from the fennel brings you something DELIGHTFUL!
Moroccan Sweet Potato and Fennel Soup with an Asian twist
Delicious for lunch or dinner!
1 large sweet potato, peeled, cubed (approx. 600g)
1 fennel bulb, cubed
1 tbsp olive oil
1 onion, diced
4 garlic cloves, finely diced
1 tbsp Just Flavour Moroccan
500ml vegetable stock
400ml coconut milk
1/2 lime, juiced
peanuts and coriander garnishes
Prepare sweet potato and fennel. Reserve 1 heaped cup of sweet potato peels for the garnish. This step is optional but great if you'd like to try it topped with sweet potato crisps 👌🏽
Heat oil in a pot, saute onion and garlic for a few minutes.
Add Just Flavour Moroccan, cubed veg, stock, coconut milk and lime juice. Gently simmer for 20 minutes, stirring occasionally.
For the sweet potato crisps, place on a lined baking tray. Lightly spray with oil and season with salt. Bake at 180°c for 10 minutes. They burn quickly, so keep an eye on them! Remove tray, shake them around and cook for a further 5 ish minutes until browned. Remove tray, they will crisp up as they cool.
Once sweet potato and fennel is tender, blend until smooth. Season with salt and pepper and top with garnishes, enjoy! ✌🏽
