I particularly love adding Just Flavour blends and crunchy garnishes to soups, as it provides flavour and a textural contrast that takes your dish from bland to grand! 👌🏽
Moroccan Pumpkin Soup
3 - 4
1/2 kent pumpkin, peeled and cubed (approx. 850g after the skin is removed)
2 medium onions, diced
5 garlic cloves, crushed
1L vegetable stock
1 tbsp Just Flavour Moroccan
1 tbsp Just Flavour Italian
1/2 cup coconut cream
pumpkin seeds, croutons and bacon pieces to serve (optional)
Pre-heat oven to 200°c. Roast pumpkin, onion and garlic together with a drizzle of olive oil for 20 minutes. You want the veg to caramelise to provide flavour.
Place roasted veg into a large pot with stock, Just Flavours and coconut. Bring to a simmer and turn off the heat after a few minutes.
Use a blender to blitz until smooth. Serve into bowls and top with a drizzle of coconut, pumpkin seeds, bacon pieces and croutons, enjoy!
If you wish to add the toppings, you can cook the bacon rashers and bread crusts together in the air fryer until crispy, about 200°c for 15-20 minutes. Then finely chop the bacon into small pieces, this will give the soup a smokey flavour 😉 of course for our veggie friends, you can omit the bacon.
