Easy to make, vegan corn, cauliflower and quinoa fritters, spiced with Just Flavour's Mexican and baked in the oven, voila!
Vegan Corn, Cauliflower and Quinoa Fritters
Lunch / Snack
A delicious stack of vegan fritters loaded with veggies and flavour! Great for lunches or snacks.
1/2 cup (100g) quinoa
1 cup (100g) cauliflower florets
1 cup (130g) frozen corn
2 tbsp Just Flavour mild Mexican
1/4 cup (45g) wholemeal flour
1/4 cup water
- Preheat oven to 200ºc. Cook quinoa according to packet.
- Meanwhile, finely chop cauliflower and place in a large bowl with all the ingredients.
- Once the quinoa is cooked, add to the bowl with salt and pepper, mix well. Use a 1/4 cup to scoop mixture and form into 8 fritters.
- Place onto a lined baking tray and cook for 10 minutes, or until golden. Turn fritters half way through cooking, enjoy!
Optional: drizzle with Greek yoghurt, aioli or to keep it vegan, blitz silken tofu with lemon juice, capers, EVOO, salt and pepper.
