Enjoy this dish for lunch, dinner or your meal prep!
Ingredients

1 tbsp olive oil
-
1 red capsicum, sliced
-
1/2 cup frozen corn
-
300g lean pork mince
-
1/2 cup passata
-
1 tbsp Just Flavour spicy Mexican
-
2 small corn tortillas
-
4 cos lettuce leaves
-
1 cup rice, cooked
-
red onion slices
-
Greek yoghurt or sour cream
Directions
Heat oil and fry off capsicum for about 5 minutes or until charred and softened, set aside.
Add corn to the pan and cook for a few minutes, set aside.
Add pork to the pan and brown. Pour in passata and Just Flavour Mexican. Gently simmer for a few minutes, set aside.
Toast corn tortillas and cut into triangles.
Divide ingredients between two serving bowls and serve with a dollop of yoghurt or sour cream, enjoy!
