This one's a goodie for our veggies friends! Filled with brown rice, mixed beans, tomatoes and Just Flavour's Mexican topped with Greek yoghurt or sour cream 👌🏽 We recommend 2 tbsp Mild or 1 tbsp of our Spicy Mexican 🔥 this dish can be whipped up in about 20 - 30 minutes 🙌🏽
Mexican Stuffed Capsicums
Dinner / Lunch
Having Just Flavour on hand makes meals like this quick, easy and DELICIOUS! 😍✔️
- 3 large capsicums, halved, seeds removed
- 1 cup cooked brown rice (we used pre-cooked rice cups or approx. 1/2 cup raw)
- 1 x 420g can mixed beans
- 1 x 400g can tomatoes
2 x tbsp Just Flavour Mild Mexican or 1 tbsp Spicy
grated cheese, Greek yoghurt or sour cream
Pre-heat oven to 180°c. Prepare capsicums and place onto a lined baking tray.
In a bowl, mix together rice, beans, tomatoes, Just Flavour Mexican, salt and pepper, mix well.
Stuff capsicums with mixture and top with grated cheese.
Cook for 15 minutes, serve with Greek yoghurt or sour cream, enjoy!
