Ingredients

2 chicken thighs (300g) thinly sliced

1 tbsp Just Flavour mild Mexican
-
1 lime, juiced (reserve 1/2 for the salad)

1/2 tbsp olive oil
-
1/2 red onion (60g) diced
-
1 x 420g can salt reduced four bean mix
-
1 cup (150g) cherry toms, halved
-
4 - 5 (150g) qukes, diced (baby cucumber)
-
1/2 avocado, diced
-
handful of spinach (20g)

Directions
Mix together chicken, Just Flavour Mexican and 1/2 lime juice with salt and pepper. Air fry chicken on 180ºc for about 12 minutes, or until cooked.
Meanwhile, heat oil in a large pot and saute onion for 2 minutes. Add the beans and mix through until warm, turn off the heat.
Add remaining salad ingredients with the other 1/2 of the lime juice. Generously season with salt and pepper.
- Serve between 2 bowls, top with cooked mexi chicken, enjoy
