This recipe is a goodie for the potato lover with a Mexican flare! 😍 Loaded up with beans and spiced with Just Flavour's Mexican 🔥 veggie friendly and topped with a dollop of Greek yoghurt 👌🏽
Loaded Sweet Potato
4 medium - small sweet potatoes
- 1 tbsp olive oil
1 brown onion, diced
- 4 garlic cloves, diced
- 1 capsicum, diced
- 1 x 400g can tomatoes
- 1 x 420g can mixed beans
1 tbsp Just Flavour Mexican Mild or Spicy
- 1 tbsp tomato paste
Preheat oven to 200°c. Pierce sweet potatoes all over with a fork. Place on a baking tray, cook for 45 minutes.
Heat oil and saute onion, garlic and capsicum. Add tomatoes, beans, Mexican and paste. Gently simmer for 10 minutes.
Remove sweet potatoes once cooked, cut down the center. Load up with Mexican beans and yoghurt, enjoy!
