Ingredients

5 free range eggs
1 ½ zucchini, grated, excess liquid squeezed (approx. 350g)
1 cup cauliflower, chopped
1 onion, diced
200g rindless bacon, diced
1 cup grated cheese (tasty or mozzarella)
¼ cup light olive oil
1 tbsp Just Flavour Italian seasoning
1 cup self raising flour, sifted

Directions

Preheat oven to 180ºc. Line a baking dish with baking paper.
Whisk eggs in a large bowl. Add all ingredients with salt and pepper and mix well to combine.
Pour mixture into baking dish and cook for 30 minutes until golden.
Remove from the oven and allow to stand for 5 minutes prior to slicing. Enjoy!

Great recipe to use up any vegetables in your fridge. Ensure to squeeze out any excess liquid if necessary to avoid a mushy slice consistency. Add some spring onions or fresh herbs as well if you like.
