Ingredients

2 x 400g chicken breast, butterflied
½ tbsp olive oil

Sauce:

⅓ cup balsamic vinegar
2 tbsp honey or sugar free maple
½ tbsp olive oil
2 garlic cloves
1 tsp Just Flavour Italian seasoning
2 tsp wholegrain mustard

Tomato Mix:

250g punnet cherry tomatoes, halved
220g cherry bocconcini, halved
2 tbsp fresh basil, chopped

Directions

Preheat oven to 200°c. In a bowl, mix together sauce ingredients, season with salt and pepper.
Mix together tomato mix, season with salt and pepper, set aside.
Butterfly chicken breast and pound with a mallet, season with salt and pepper.
Heat ½ tbsp oil on medium - high. Sear chicken for 2 minutes on each side.
Add balsamic mixture and scrape the bottom bits off the pan while gently simmering for a couple of minutes.
Turn off the heat and sprinkle chicken with tomato mixture. Cook in the oven for 8 - 10 minutes or until chicken is cooked through.
Serve with your choice of sides such as rice, pasta, veggies or salad, enjoy!
