Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 4 garlic cloves, finely diced
- 3 cups of carrot, celery and potatoes, diced
- 1 can diced tomatoes
- 1.5L veg stock or water

2 tbsp Just Flavour Italian
- 1 tbsp tomato paste
- 1 cup elbow pasta
- 1 can cannellini beans
Directions
Heat oil in a pot, saute onion and garlic for 2 minutes.
Add diced vegetables and cook for a few more minutes.
Add tomatoes, stock, Just Flavour Italian and paste. Gently simmer for 20 minutes.
Meanwhile cook pasta separately for 5 minutes only. The pasta will continue cooking once added to the soup, so undercook slightly.
Add beans, salt and pepper and serve with parmesan and bread, enjoy!
