Some recipes call for breadcrumbs which can tend to dry out the meat while it's cooking (panko crumbs are ok).
Soaked bread helps to retain moisture and flavour in the meatballs while they are cooking away. We used milk to soak the bread, you could also use broth or other desired liquids.
