Only 10 ingredients required, some of which you may already have in your kitchen 🙌🏽
For our non-seafood lovers, you can still make the Mediterranean mix and replace the salmon with your choice of protein ☺️
Mediterranean Baked Salmon
Seafood / Dinner / Lunch
- 1/2 red onion, sliced
- 6 lemon slices + 1 lemon, juiced
- 4 salmon fillets, 3cm thick (skin on or off)
- 2 tbsp olive oil
1 tbsp Just Flavour Italian + some to sprinkle on the salmon
- 1 punnet cherry tomatoes, halved
- 1/2 cup olives, sliced
- 1 lebanese cucumber, diced
- 1/2 cup Danish feta
- fresh dill + spring onions (optional)
Pre-heat oven to 200°c. Scatter onion & lemon slices on a lined baking dish.
Place salmon on top, skin side down. Sprinkle with some Just Flavour Italian. Bake for 8 minutes for medium or 12 minutes well done.
Mix together lemon juice, olive oil, 1 tbsp Just Flavour Italian, tomatoes, olives, cucumber, feta, salt and pepper.
Spoon 2/3 of the mix on a serving plate. Top with cooked salmon, lemon and onion slices, the remaining mediterranean mix and juices. Garnish with dill and spring onions, enjoy!
