Italian Crusted Lamb Rack

The flavour of this crust is unreal! And would pair nicely with fish too.
- 1 lamb rack (9 point, approx. 900g)
- 2 ½ tbsp olive oil
- ⅓ cup raw cashews
- ⅓ cup parmesan
⅓ cup fresh herbs (parsley, basil, rosemary)
1 tbsp Just Flavour Italian
- 1 garlic clove
Pre-heat oven to 180°c. Score lamb rack in a diamond pattern. Drizzle with ½ tbsp oil and salt.
Render fat by frying in a pan on medium heat. Cook fat for about 5 minutes, set aside in a baking dish.
For the crumb, blitz 2 tbsp oil and the remaining ingredients together until it resembles fine crumbs.
Firmly press crumbs evenly over the rack. Roast for 20 minutes for medium or to your liking.
Allow to rest for 5 minutes loosely covered with foil. Slice and serve with your favourite sides, enjoy!
Don't worry if some of the crust falls off when slicing, just scatter over the dish when serving. To prevent this from happening as much, process the crumb mixture a little finer and press on the rack firmly.
