How good is it when you can whip up dinner with 4 ingredients and be ready in less than 30 minutes?! 🤩 It's meat free Monday again and we've been loving our simple Eggplant Parmigiana! 🍆 It has been apart of our meal prep the last couple of days along with some other delicious meals seasoned with Just Flavour of course! 😉

Ingredients
3 medium eggplants (approx. 1.2kg), sliced lengthways about 6mm thick
- 2 cups passata
-
2 tbsp Just Flavour Italian
- your choice of cheese
Directions
Preheat oven to 180°c. Mix together passata, Just Flavour Italian, salt and pepper, set aside.
In batches, lightly spray sides of eggplant with oil and fry for 1-2 minutes each side. Then transfer directly into a square baking dish.
As you fry the eggplant in batches, layer the baking dish with Italian passata and cheese.
Bake for 20 minutes, serve with your fav sides, enjoy!
