We decided to 'lighten up' the classic potato bake with cauliflower to switch things up a little 👏🏽 Instead of making bechamel sauce using butter, flour and milk, we used cauliflower and Just Flavour's 'Everything' seasoning ✌🏽 This cauliflower sauce is plant-based and can be used for other dishes like mac n 'cheese', veggie lasagne or pastas 😍
Lighter Potato and Cauliflower Bake

5 cups cauliflower (3 cups chopped, 2 cups florets)
1 cup vegetable stock or water
1 tbsp Just Flavour Everything seasoning
1 tbsp nuttelex
4 medium potatoes, peeled, cubed small
1/2 cup grated cheese
1/4 cup parmesan
1/4 cup panko crumbs
Preheat oven to 200°c. For the sauce, cook 3 cups of chopped cauliflower with stock or water and Just Flavour 'Everything' for 5 minutes.
Blitz with nuttelex and a pinch of salt until smooth, set aside.
Steam potatoes with 2 cups of cauliflower florets for 12 - 15 minutes or until tender. Place into a baking dish and season with salt.
Pour sauce over the steamed veg, top with cheese and crumbs. Bake for 15 - 20 minutes or until golden. Serve as a side with your fav meals! ✌🏽
