It’s Good Friday! 🎉 We hope you'll be enjoying a day off as we are, and indulging on fresh, delicious seafood 😍
Although, we know not everyone is a fan of seafood, so today we'll be sharing our Crispy Tofu Warm Noodle Salad recipe 👏🏽 Not going to lie, we aren't huge eaters of tofu, however, we know we have plant-based followers and people seeking more plant-based recipe inspiration ✨ and after tasting this dish, we're both impressed! 🤩
Crispy Tofu Warm Noodle Salad
Salad / Lunch
We used our trusty, Kmart air fryer for this recipe. You can shallow fry the tofu if you don't have an air fryer, just use more oil ☺️ So to our plant-based foodies, this one's for you! 👏🏽
2 tbsp polenta
1 tbsp Just Flavour Everything
300g Macro firm tofu, cubed
100g pkt vermicelli noodles
2 tbsp olive oil
2 tbsp honey or maple
2 tbsp white wine vinegar
1 tsp Just Flavour Peri Peri mild or spicy
2 cups of salad mix (we used red capsicum, carrot, red and green cabbage)
roasted cashews, unsalted
Mix together polenta, Just Flavour 'Everything', salt and pepper in a bowl, set aside.
Spray air fryer basket with oil. Crumb tofu pieces and place straight into the air fryer basket. Spray tofu with oil and cook on 200°c for 15 minutes.
Place vermicelli noodles in a bowl. Cover with boiling water and stand for 5 minutes. Strain the noodles, cool to the touch and cut down to manageable lengths.
In a jar, add olive oil, honey or maple, white wine vinegar, peri peri and shake well, set aside.
Add salad mix to a bowl with warm noodles and dressing. Mix well and serve between 2 bowls. Top with crispy tofu and cashews, enjoy!
